Can I play TI-89 games on my TI-89 Titanium?
Answer:

Yes, although you need several different programs for this to work correctly. You have to run hw3patch first, and then run GhostBuster on the program. hw3patch (Hardware three patch) unlocks some of the data available on the calculator, and GhostBuster simply patches the programs themselves.

These programs are only intended as a temporary solution until the program author (hopefully) makes their programs fully compatible with the 89t. Also, please keep in mind that both hw3patch and GhostBuster require the user to read their extensive documentation before attempting to run them, as they require some special syntax to run, among other issues that you'll need to learn about.

Answer:
Chances are that this is not possible. Your best bet is to find a version of that game for your calculator. Or, of course, you could write your own version.

That being said, some authors will make a program compatible with 2 or more 68k calculators. Check the readme.

What is AMS?
Answer:
AMS stands for "Advanced Mathematical Software," and is the Operating System for the 68k calculators. The AMS contains a CAS (Computer Algebraic System) that enables symbolic manipulation for working with equations with unknown variables, and enables the calculator to give exact answers and such. Unlike operating system upgrades for the z80 calculators, TI will add new functionality and features, but it seems that they are satisfied with 2.09, and don't expect to see many new features, except for support for new addons (like keyboards and such). There are three major versions of the AMS. 1.0 is the old one, and is not desired in almost all cases. 2.0 has major upgrades from the first version. 3.0 is for the 89t only (HW3). 2.09 is the current version for the HW1 and HW2 calcs, and 3.0 is the current one for the HW3.

Answer:
You could pull the batteries, but usually a soft reset will do. Try pressing 2nd+left+right+on (all at once, and press them in that order). That will usually fix your problem. The calculator will reload your OS, and you can use your calculator again, without pulling the power to it.

Note to 89t users: Be sure to install the hw3patch and use ghostbuster on programs that are not specifically compiled for HW3 (the 89t).
